Make systemd unit use a dedicated user, and note this in the install documentation

This tweaks the irkerd systemd unit to run as irkerd under a dedicated user rather than the default of root, which matches Debian policy and usual recommended best practices, and adds a note about this to the install documentation

The wording in the install documentation can be improved - suggestions welcome.
