Add ability to set hostname for specs container

This MR adds the ability to set the hostname of the specs container, and sets the hostname for the Test::Instance::Image scenario.

Will be consumed by this MR which spins up a server in the test container.

Happy to discuss the strategy or the need in more detail.

Would it be better to follow up with a release MR or use this MR as a release?
