Add Geo instance and staging scenarios to doc

This MR:

  • Add descriptions for Test::Instance::Geo and Test::Instance::StagingGeo scenarios
  • Removes EE license requirement for Test::Instance::Geo scenario, since the live Geo deployment under test will already have one.
