Add needed docker parameter for Elasticsearch 8

What does this MR do and why?

Added a necessary docker parameter to allow Elasticsearch 8 to run properly. Without this param, the nightly job fails on creating an empty index https://gitlab.com/gitlab-org/quality/nightly/-/jobs/2459612950
