doc: discourage util.inspect.defaultOptions usage

Changing the default options is often a bad idea because it has impact on the whole application and not only on a specific controlled part.

Checklist

• make -j4 test (UNIX), or vcbuild test (Windows) passes
• tests and/or benchmarks are included
• documentation is changed or added
• commit message follows commit guidelines
